Alongside beef, lamb, bacon, and other meat, our butcher offers naturally lean and tender venison reared on our farm. Choose from frying steaks, grill steaks, hand-rolled meatballs, hand-pressed burgers, hand-made sausages, mince and diced venison. The meat is prepared as haunch, side, saddle or shoulder, all offering a finer texture than comparable cuts of beef. Our butcher will be on hand to give expert advice on the most suitable cooking methods.
Centuries ago, a deer farm was operated as a ‘live larder’ with continuous access to deer fed on grass and forage, a tradition we continue today. From farm to butcher, proceedings are supervised by our estate manager Dominic Strutt, a nationally recognised authority on deer husbandry. Under his leadership, our farm has been selected as a trusted supplier to M&S and Waitrose & Partners.
